World Best Steak and asparagus!!!


Ok I know that the chicken was getting a little old! I think I bit off more than I could chew by attempting a daily blog. So now I am going to do a weekly blog with maybe a few bonus recipes in between. I will also be including side dishes to pair with the main dish! This seems much more doable! So for today we have a recipe for the worlds best steak and some fantastic asparagus!!



First the Steak:

Take your steak and put it on a deep plate (duh :-)

You'll need-

Spade L Ranch Fish & Seafood Seasoning
Salt and Pepper
Soy Sauce


We use the Fish seasoning instead of steak seasoning because it has more flavor, less salt and no MSG.


Rub both sides of the steak down with the fish seasoning.
Shake salp and pepper liberally on both sides. Poor a generous amount of soy sauce so that both sides will have some.

Simple. Delicious.


Grill to desired doneness!

Ok next we have asparagus. The ingredients are simple but the cooking is a little more tricky.

You'll need-

Asparagus
Lemon Pepper
S&P
Season All
Water

In a deep skillet place your asparagus and just enough water to cover the bottom of the pan.

Shake a generous amount of all your seasonings into the skillet. Mix.

Cook on High, covered, until all the water is gone and your asparagus has slightly stuck to the bottom of the pan. Add a small amount of water and heat just until the water is gone. Then it is ready! So good!! (Hint- the best way to get great asparagus is to break each piece at its natural breaking point. To do this lightly grab each end and bend. You will avoid all bitterness and stringiness by doing this. It is much more effective than cutting.)

Cold Italian Chicken Pasta


The first think is to make the chicken. Use the Versatile chicken recipe. Boil one bag of wide egg noodles. When the noodles are done, rinse them with cold water. Chop finished chicken into bite size pieces. Add rinsed noodles and chicken to a large bowl. Top with Red wine & Olive oil dressing. Mix well. Add a few shakes of salt and pepper.... VoilĂ !!!! So easy and so yummy!!! Serve chilled. Of course Feta is always encouraged!!! :-D

Delicious Chicken Casserole


Day 3

I was experimenting when I made this recipe and was surprised how amazing it turned out and with very little time, effort, or for that matter ,money!




Items Needed:

2 or 3 of your cooked chicken breast (Depending on size)
Wide Egg Noodles (16oz bag)
Oriental Crispy Noodles
Fresh Broccoli
1 can Cream of Mushroom with roasted garlic
1 can Cream of Chicken
1 cup milk (ish)
1 large spoon of chopped garlic
Tony's Creole seasoning
Adobo
Salt & Pepper
Shredded cheese (take your pick)

First chop chicken breast into bite size pieces and place on the bottom of an un-greased 9x13 dish (Any baking dish will do). Sprinkle (liberally) Tony's creole, adobo and salt and pepper all over the chicken in the dish.

Cook Noodles
Steam Broccoli

In a bowl mix Cream of mushroom, Cream of chicken, milk and chopped garlic. Stir until thoroughly mixed. Set aside.

Sprinkle the cheese on the chicken
Add steamed broccoli
sprinkle more cheese
Add cooked noodles
Add your Cream mixture

Slightly mix all of this together in the dish.
Top with more cheese and crumbled oriental noodles

Bake at 350 for 30 minutes. Check every ten minutes. Since everything is cooked you are just trying to get it all to melt together and get deliciously hot!

Toasted Sesame Ginger Chicken Salad


Day 2!!

Ok so remember the chicken you made from yesterdays recipe? It's time to put it to even yummier use! :-D

Items needed:
Cooked Chicken (if you refrigerated yesterdays chicken then you will want to reheat it a little but do not make it hot)
Oriental crispy noodles
Spinach
Your favorite mixture of greens (romaine..etc)
Feta (yes I know it's Greek in our Asian salad:-)
Toasted sesame ginger dressing (lighthouse fridge section)
Peppers (red,orange) (optional)
Shaved Almonds (optional)

Mix your greens, spinach and peppers in a large bowl.
Cut a chicken breast or two (depending on size) into small salad like pieces and add to the salad mixture.
Add desired amount of dressing (do not saturate)
Add crispy noodles, almonds and feta.

This is a simple recipe that takes no effort but tastes amazing! It is filling so it can be used as a meal in its self on hot summer days!!..plus, kids love it too!!

Day One! Versatile Chicken!


Welcome to my cooking blog! I am going to post easy, busy mom friendly, recipes everyday for a year. As a single mom of 3 I found that between balancing sports, school, friends and activities it became nearly impossible to cook a well balanced meal every night...so I started getting creative! I make a meat (say chicken) on Sunday. I make five or six chicken breasts, then serve some for dinner that night and freeze the rest. Then the next night I make a meal with some of that chicken and say, noodles, then the next night chicken salad..and so on and so forth.

My first recipe will be for the chicken. It is flavorful but mild so it can be used in all of the next weeks recipes.

Items needed:

5 + chicken breast
Red Wine and Oil salad dressing
Soy Sauce
Adobo Seasoning (if you cannot find adobo do a strong mixture of garlic powder, salt and pepper)
Tony Creole Seasoning
Salt and Pepper

Direction:
In a 9x13 baking dish add all seasonings to chicken
Pour the dressing and soy over the top until you have a good amount sitting in the bottom of the pan.
Cook at 350 until done
Let it sit in the pan for awhile to absorb the tastes on the bottom!


VOILA!! Super easy and amazing!
